
A simple savoury bake that celebrates one of spring’s most beloved wild ingredients. These Wild Garlic Cheese Scones combine mature cheddar, fresh wild garlic and a blend of warming spices to create light, fluffy scones packed with flavour.
Perfect served warm with butter, tucked into a picnic basket, or enjoyed alongside a bowl of soup. 🌿🧀✨
INGREDIENTS
30g organic or grass-fed butter
170g self raising flour
90g strong organic cheddar (reserve some for sprinkling)
1 handful wild garlic leaves & stems
1/4 tsp mustard powder
a tiny pinch of cayenne pepper for a spicy hit
a pinch of smoked paprika
a grinding of black pepper
1 big pinch sea salt
1 organic egg
2 tbsp water
INSTRUCTIONS
Preheat Oven 220c/200c fan
I use organic dairy and eggs for the extra nutrients and anti-inflammatory perks!
Rub the butter into the flour.
Add in seasonings, grated cheese & chopped wild garlic.
Make a well, add the egg and water to it. Whisk briefly with a fork and fold ingredients together using a wooden spoon, until you can pick up and mould into a big ball.
Divide into 4 balls (or more by making the balls smaller) and place on parchment lined baking tray and brush with milk.
Sprinkle on top your extra cheese and some finely chopped wild garlic.
Bake for 15 minutes. Turn oven down to 200c/180c fan and continue to bake for a further 10-15 mins or until lightly browned all over.
