Lucy’s Wild Garlic & Nettle Houmous

A vibrant wild twist on a classic favourite, this Wild Garlic & Nettle Houmous combines creamy chickpeas with fresh wild garlic, nutrient-rich nettles, tahini and lemon. Smooth, zesty and packed with seasonal flavour, it’s perfect as a dip, spread or accompaniment to salads and picnics, making it easy to bring wild foods into everyday meals. 🌿✨

INGREDIENTS

*   2x 380g carton (Sainsbury’s) of organic chickpeas drained and rinsed 

*   1 large handful wild garlic leaves, chopped 

*   1 large handful nettle leaves – steamed 4 mins, then added to cold water bath

*   2 tbsp tahini paste

*   1 tsp sea salt

*   1/2 tsp black pepper

*   1 tsp sweet smoked paprika

*   5x tbsp water

*   2 lemons – juice and zest of 

*   1-2 tbsp organic olive oil

INSTRUCTIONS

1. Add all ingredients to a blender and blitz until smooth. 

2. Taste and adjust with more wild garlic, lemon or salt until right. 

3. Enjoy fresh and keep in fridge for up to 3 days.
