Ingredients (makes 20 small):
- 300g plain flour
- 2 tsp baking powder
- ½ tsp salt
- ½ tsp mustard powder (optional)
- 75g cold butter, cubed
- 150g mature cheddar, grated
- 30–40g wild garlic leaves, finely chopped
- 150ml milk (adjust if needed)
Method:
- Preheat oven to 200°C (180°C fan). Line a tray.
- Mix flour, baking powder, salt, and mustard powder.
- Rub in the butter until it resembles breadcrumbs.
- Stir in the cheese and wild garlic.
- Gradually add milk, forming a soft dough.
- On a floured surface, pat the dough to 2–3cm thick. Cut out small rounds or triangles.
- Place on tray, brush with milk and top with more grated cheese, and bake for 12–15 minutes until golden and risen.
