Cheryl’s Enchanted Forest Bites

A decadent wild treat inspired by the flavours of the forest. Cheryl’s Enchanted Forest Bites combine sweet dates, almond butter and dark chocolate, with the option of adding medicinal mushrooms and nettle seeds for an extra wild twist. Finished with delicate rose and dandelion petals, they’re as beautiful as they are delicious. 🌹🍫🌼

Ingredients:

  • 250 g pitted dates 
  • 100 g almond butter 
  • 1–2 tbsp Turkey Tail, Artist’s Bracket, Birch Polypore tincture (optional)
  • 1 tsp extracted Turkey Tail powder (optional)
  • 180 g 85% dark chocolate 
  • 1 tbsp nettle seeds (optional)
  • Rose petals (for decoration) 
  • Dandelion petals (for decoration) 

Method:

  1. Soak the dates in boiling water for 10 minutes to soften, then drain. 
  2. Place the dates, almond butter, tincture, extracted Turkey Tail powder, and nettle seeds into a blender. Blitz until a smooth paste forms. 
  3. Roll into 5 g balls and gently flatten into discs. Chill them in the fridge. 
  4. Melt the dark chocolate over a bain-marie. 
  5. Dip each disc in the melted chocolate to coat. Top each one with a rose petal and a dandelion petal. 
  6. Chill again until set. Enjoy
