Date, Almond Butter & DarkChocolate Bark with Nettle Seeds.

Sweet, rich and irresistibly satisfying, this Date, Almond Butter & Dark Chocolate Bark is made with just a handful of wholesome ingredients that come together to create an indulgent yet nourishing treat. Soft Medjool dates form a naturally caramel-like base, layered with creamy almond butter before being topped with rich dark chocolate and a generous scattering of mineral-rich nettle seeds.

For an extra botanical boost, Hayley stirs Lion’s Mane and Turkey Tail mushroom tinctures into the melted chocolate alongside a little coconut oil, adding another layer of functional ingredients to this delicious snack. The dates can also be soaked in fragrant meadowsweet tea before use, bringing a subtle floral note to the finished bark.

Perfect as an afternoon pick-me-up, post-walk snack or healthier dessert, this recipe is quick to prepare and keeps well in the fridge whenever you need something sweet.

Makes: Approximately 10–12 pieces 


Ingredients

  • 12–15 soft Medjool dates, pitted
  • (Optional) Meadowsweet tea, for soaking the dates
  • 3–4 tbsp almond butter
  • 150g dark chocolate (70% cocoa or higher)
  • 1–2 tbsp dried nettle seeds
  • Pinch of sea salt
  • Coconut oil (optional)
  • Lion’s Mane mushroom tincture (optional)
  • Turkey Tail mushroom tincture (optional) 

Method

Prepare the date base

  1. If desired, soak the pitted Medjool dates in meadowsweet tea for 15 minutes, then drain well.
  2. Line a small tray or plate with baking parchment.
  3. Split the dates and press them tightly together into a single layer, forming a rectangle approximately 1cm thick.
  4. Place another sheet of baking parchment over the top and gently roll or press to create an even surface.

Add the almond butter

  1. Spread the almond butter evenly over the date layer.

Melt the chocolate

  1. Melt the dark chocolate in a heatproof bowl set over a pan of gently simmering water, or in short bursts in the microwave, stirring frequently.
  2. If using, stir in a little coconut oil together with the Lion’s Mane and Turkey Tail tinctures until smooth.

Assemble

  1. Pour the melted chocolate over the almond butter layer and spread evenly.
  2. Sprinkle the nettle seeds over the surface.
  3. Finish with a pinch of sea salt, if desired.

Chill

  1. Refrigerate for 1–2 hours, or until completely firm.
  2. Remove from the fridge and break or cut into bark-sized chunks before serving.
