
A vibrant, flavour-packed pesto made with fresh wild garlic, toasted walnuts and rich miso for an irresistible savoury depth. Perfect stirred through pasta, spread onto sourdough, or spooned over roasted vegetables, this simple recipe celebrates one of spring’s most loved wild ingredients and is a delicious way to preserve the wild garlic season. 🌿
- 100 g wild garlic leaves
- 90 g toasted walnuts
- 2 tablespoons miso
- 1 lemon, juiced
- 3-4 tablespoons extra-virgin olive oil
- 4-6 tablespoons water (plus more if needed)
- Salt and pepper to taste
Method
- Place all of ingredients in blender or food processor
- Blitz until smooth
- Add additional salt, pepper or water as required
- Enjoy slathered on sourdough or mixed into your fave pasta
- Why not try adding some other spring greens for a different flavour. Nettles are a great nutritious addition as are dandelion leaves. Just add a bit at a time and check you are happy with the flavour
